What is Borscht?

Borscht is a traditional Ukrainian soup based on beetroot, which gives it its characteristic deep red colour. It is a comfort dish prepared across Ukraine for centuries, with variations from family to family and region to region. Borscht can be made with beef, pork or chicken, or in a fully vegetarian version. Its richness of flavours — sour, sweet, salty and earthy — makes it one of the most complex and satisfying dishes in European gastronomy.

UNESCO Recognition in 2022

In July 2022, during a period of great difficulty for Ukraine, UNESCO inscribed Borscht on the List of Intangible Cultural Heritage in Need of Urgent Safeguarding. This recognition was a powerful affirmation of Ukrainian cultural identity to the world. The decision underlines that Borscht is not just food — it is an act of culture, memory and resilience.

Traditional ingredients

The base ingredients of a traditional Borscht include: fresh beetroot (the main ingredient), white cabbage, potato, carrot, onion, garlic, tomato or tomato paste, meat or vegetable broth, and fresh sour cream to serve. Every Ukrainian family has its own variation, with the addition of beans, peppers or other seasonal vegetables. The secret lies in the beetroot sautéed separately to preserve the colour and the slow cooking time that develops the flavours.
