Grechanyk is one of the most original starters on our menu — a miniature version of the traditional Yavoriv cake, reinvented by Chef Kateryna Mahalius specifically for Família restaurant in Coimbra.
What is Grechanyk?
Grechanyk (Гречаник) is a small buckwheat and pork pasty from the culinary tradition of the Yavoriv region in western Ukraine. Its base is buckwheat — a grain with a deep, earthy flavour widely used in Ukrainian cuisine — mixed with seasoned pork, onion and spices, shaped into a small baked patty.
Inspired by the Yavoriv cake
The Yavoriv cake is a traditional dish from western Ukraine, typically prepared for celebrations and family gatherings. It is a large buckwheat and meat cake, rich and comforting, representing Ukrainian peasant cooking in its most authentic form. Chef Kateryna grew up eating this dish with her family and wanted to bring it to Coimbra — adapted into a starter format: smaller, more refined, perfect for sharing.
Chef Kateryna's version
At Família restaurant, Chef Kateryna created Grechanyk as a signature starter. Smaller than the traditional cake, it is made with quality buckwheat, local pork and selected spices, baked until golden and served warm. It pairs beautifully with Borscht and is also excellent on its own as a light starter. It is one of the most authentic ways to experience western Ukrainian cuisine in Portugal.
