Ukrainian Cuisine: 5 Essential Dishes to Try in Portugal

By Kateryna Mahalius·

Ukrainian cuisine is one of Europe's most distinctive and least-discovered food cultures. Rooted in centuries of agricultural tradition, shaped by cold winters and fertile soil, it is a cuisine of depth, warmth, and cultural identity — now available in the heart of Coimbra.

1. Borsch — Ukraine's Most Famous Dish

Borsch is a deep red beetroot soup recognised by UNESCO as Intangible Cultural Heritage of Humanity in 2022. Made with fresh beets, cabbage, potato, and a slow-cooked broth, it is served with sour cream. It is simultaneously simple and complex — a soup that takes hours to develop its layered flavours. At Familia in Coimbra, Chef Kateryna prepares borsch from her family recipe using locally sourced Portuguese vegetables.

2. Varenyky — Handmade Ukrainian Dumplings

Varenyky are boiled or pan-fried dumplings with fillings ranging from potato and cheese to cherries and meat. They are the comfort food of Ukraine — made by hand, assembled at the family table, and eaten at every celebration. Chef Kateryna's potato varenyky are made fresh daily at Familia, using her grandmother's dough recipe and locally grown Portuguese potatoes.

3. Chicken Kyiv — Ukraine's International Ambassador

Chicken Kyiv is the dish that brought Ukrainian cuisine to international attention. A breaded chicken breast filled with herb butter that melts into the meat when cut — it is simultaneously crisp, juicy, and aromatic. Originating in Kyiv, it became a global restaurant classic. At Familia, it is prepared with French-style compound butter and a golden breadcrumb crust.

4. Grechanyk — Chef Kateryna's Special Recipe

Grechanyk at Familia is Chef Kateryna Mahalius's original creation, inspired by the traditional Yavoriv cake from western Ukraine. It is a small buckwheat cake with pork, baked in the oven until golden — no eggs, no frying. It is served as a starter alongside borsch and is one of the most distinctive dishes on the menu, a recipe you won't find anywhere else in Portugal.

5. Syrnyky — Ukrainian Cheesecakes from Lviv

Syrnyky are Ukrainian cottage cheese pancakes made with fresh quark cheese, egg, and a little flour, pan-fried to a golden crust and served with sour cream, jam, or honey. The Lviv version is particularly famous — denser and richer. At Familia, syrnyky from Lviv feature on the dessert menu, offering a sweet finish rooted in western Ukrainian tradition.
