Kyiv Cake
Kyiv Cake consists of two layers of crisp meringue with a rich buttercream filling. The top is decorated with colorful creams, and the sides are coated with nut crumbs. The traditional round box features a green chestnut branch and two cheerful chestnuts. There are several stories about its origin: one tells of egg whites left out overnight, which were turned into meringue layers and assembled with buttercream to save the batch; another credits the young confectioner Nadiia Chornogor. The recipe was developed in 1956, originally using cashew nuts, but later hazelnuts became standard due to cost. Kyiv Cake remains a classic and beloved Ukrainian dessert.
